Tasting Notes: The 2007 Merlot from Hillside Estate Winery is ready to drink now but we recommend decanting for two to three hours before serving. This will allow the nose to open up with aromas of blackberry, dark cherry, vanilla and mildly toasted oak. This will also serve to help deal with the large amount of sediment in this non-filtered wine.
The dry palate, with moderate tannins and acidity, offers flavours of dark fruit, dark chocolate and prominent earthy notes. This is a wine best enjoyed with food like grilled meats. Drink now through 2013.
